How our oil is made.

Four steps, in the order they happen, with the limits stated rather than hidden.

  1. Harvested by hand

    From our own grove at Kolazhy and trusted farmers in the Thrissur region, picked at ripeness. Not bought on the open market.

  2. Controlled electric heat

    The kernel is dried into copra in our own drying units, where temperature and time are held steady rather than left to the weather. No sun drying, no contamination risk.

  3. Wood-pressed at the chekku mill

    Slow wood-pressing with no heat added at the press. The speed is the point - speed creates heat, and heat changes the aroma. Steady for everyday Kerala cooking.

  4. Filtered naturally

    Settled and filtered. No bleaching, no deodorising, nothing added. The batch is written into the record before it is bottled.

One thing we will not pretend about: Bullocks turned the original chekku. Today the same wood press is electric-driven. Same press, same slow speed, no heat added - but it is turned by a motor, and we would rather tell you than let you find out.

What is chekku?

Chekku, or marachakku, is the traditional wooden press. A wooden pestle turns slowly inside a wooden mortar, crushing the copra without generating heat. Slow is the point - speed creates heat, and heat is what changes the aroma and the taste.

Where do the coconuts come from?

From our own grove at Kolazhy in Thrissur, together with trusted farmers in the Thrissur region. It is not a single field and we would rather say so than imply otherwise.
